The BEST Detox-Friendly Vegetarian Chili

Let’s face it, drug detoxing isn’t always a walk in the park. Our detox is different, buy it’s designed to make the process as easy as possible. No fasting or starving yourself. Your body needs fuel, so while we remove certain foods, we add in nutritious ones in their place. Our owner, Jackie, found this recipe to be the perfect meal to keep her energized and satisfied during her 10 Day Detox. Try it out!

 

1 tbsp. cold-pressed extra virgin olive oil

1 medium onion, chopped

2 whole carrots, diced

4 cloves garlic, minced

2 stalks celery

1 jalapeno pepper, fresh or canned, finely diced (or red pepper flakes to taste)

2 tbsp. chili powder

2 tsp. cumin

1 cup cooked kidney beans

1 cup cooked pinto beans

1 can black beans

1 can cannellini beans

28 oz. can tomatoes, chopped (reserve juice)

½ tsp. freshly ground pepper

2 tbsp. parsley, finely chopped

 

In a large soup kettle, heat oil over low heat; add onion, carrot, garlic, and peppers. Cover and cook until vegetables are very soft, about 10 minutes remove lid, add chili powder and cumin and cook 2-3 minutes, stirring occasionally. Add beans, tomatoes, and their juice. Simmer 20 minutes. Add pepper. Top bowls of chili with parsley. (Freeze leftovers for later use!)
